Waldorf Cucumbers
Serves 2
1 medium cucumber
1 granny apple, cored and thinly sliced
sauce
mix together
1 ½ teaspoon lemon juice
1 tablespoon sour cream
2 teaspoon mayo or light miracle whip
1 ½ teaspoon fresh parsley, minced
½ teaspoon salt
¼ teaspoon black pepper
1. Peel and cut cucumber into 1/8-inch-slices
2. Core and chop apple into 1/8-inch-slices
3. Blend sauce mixture into cucumber and apple.
4. Refrigerate before serving
