Broccoli Pesto pasta
Serves 8
sauce
1 head broccoli
½ small onion
½ cup olive oil
1 cup grated parmesan cheese
½ cup fresh basil
½ cup parsley
1 tablespoon walnuts
1 teaspoon salt
1 package of pasta or vegetable pasta
1. Cook pasta according to directions on package.
2. Cut raw broccoli into pieces that will fit into a blender.
3. Place onion, olive oil, cheese, basil, parsley, walnuts and salt in blender and blend, slowly add broccoli until
pureed. If sauce is too thick for the blender add water until a slightly coarse texture.
4. When pasta is done pour the sauce over it.
