Oriental Cucumbers
Serves 4
4 medium cucumbers
1 small red onion
sauce
mix together
2 tablespoons lite soy sauce
2 tablespoons rice vinegar
1 tablespoon flax seed oil or olive or sesame oil
optional: ¼ cup of fresh chopped lemon mint,
or 1 teaspoon of sesame seeds,
or ¼ cup of fresh blueberries
1. Peel and slice cucumbers
2. Dice red onion
3. Whisk sauce together and pour over cucumbers
refrigerate and serve
