Waldorf Coleslaw
Serves 8
4 cups cabbage, shredded
1 cup apples, cored and chopped (2 small)
½ cup raisins
½ cup dry roasted peanuts, chopped
sauce
mix together
¾ cup plain yogurt
¼ cup nonfat dry milk powder
½ cup light Miracle whip or Mayo
1 tablespoon sugar or honey
salt and pepper to taste
1. Shred cabbage
2. Core and chop apples
3. Chop peanuts
4. Blend sauce mixture into cabbage, apples and peanuts.
5. Refrigerate before serving
Potential healing power
The main ingredient in this salad is cabbage. Cabbage was once called “the medicine of the poor”.
It is also known as a vegetable stress buster. Fibros may perceive
stress to a greater degree than normal individuals. One tool in managing FM whether by food or techniques is stress management.
Cabbage has been shown in some studies to decrease the risk of colon cancer by 60-70%. Cabbage contains indoles that have been shown to
reduce breast cancer risk by preventing estrogen overproduction, or by transforming the more cancer-promoting types of estrogen.
Some studies suggest that raisins lower blood cholesterol and LDL cholesterol levels, improve bowel function and possibly lower the risk
of colon cancer.
